一般是低温是1-3天,高温1天!

1、面和的软一点,多饧饧,和上面饧着,再开始准备馅料,等馅料都调好了,面也就饧的差不多了。

2、面软,擀的时候会粘,多撒些面扑即可。

3、面皮一定要擀的薄一些,越薄越好,蒸出来近乎透明,青绿的菜色隐隐可见。

4、因为是死面,所以面皮不能太厚。

5、如果皮太薄,馅料太多的话,是有些不太好卷。卷的时候要转着圈,稍微拉扯着卷。

在苏北老家有一种美食,叫萝卜卷子,就是用萝卜和豆腐做馅的一种面食。萝卜用的是自家地里种的红萝卜,个大味美,做出来卷子还非常漂亮。豆腐是用农家铁锅做出来的卤水豆腐,浓浓的豆腐香味。

小时候经常吃萝卜卷子,冬天的时候,想吃时,就去自个家院子里的萝卜窖子扒几个萝卜,买一块豆腐,做一锅热腾腾的萝卜卷子。后来长大了,离开了家,渐渐吃的也就少了。但每次吃的时候,还是记忆中童年的那个味道。

现在秋季天气干燥,而萝卜性凉,清热生津,降火去燥。这个季节正好是萝卜大量上市的时候,既便宜,又新鲜,因此秋季可以多吃些萝卜做成的美食。

下面就来和大家一起分享这道萝卜卷子的做法:

所需食材 :

面粉2碗,萝卜2个,豆腐1块,大葱1根,姜末适量,食用油、盐、花椒粉适量。

制作过程:

1、和面:将适量温水慢慢倒入面粉,同时用筷子搅拌均匀,揉成光滑的面团,盖上盖子或保鲜膜,醒发20分钟左右。

2、调馅:萝卜洗净、切丝;豆腐切小丁;葱姜切末。将萝卜丝,豆腐丁放入盆中,加入葱姜末、花椒粉、盐,食用油,搅拌调匀。

3、调完馅后,面粉基本就醒发好了,可以开始做萝卜卷了。

4、用擀面杖将面团擀成面皮,面皮可以比饺子皮稍厚一点。然后将调好的馅倒在面皮上,用筷子把馅均匀铺开。

5、从一侧开始慢慢卷起,卷的时候一定要卷紧,这样做出的萝卜卷形状和味道才会更好。全部卷完后,把两头捏紧封住口。

6、把卷好的长条,用刀切成长短均匀的小段,不用太长,也不能太短。

7、将切好的萝卜卷放入锅中篦子上,冷水上锅,大火蒸20分钟。

8、关火,开锅,一锅味道鲜美的萝卜卷子就出锅啦。

新出锅的萝卜卷子,鲜美无比,咬一口在嘴中,满满的是家乡的味道。我每次吃萝卜卷都有一种过年的感觉,那种只有过年才会有的味道,可能只有从小吃过萝卜卷子的人,才能体会到这种感觉吧!其实美食不一定非要是珍馐美味,只要是自己喜欢的,就是最珍贵的美食。

吃剩下的萝卜卷,可以用平底锅小火煎至表皮金黄,吃的时候配点醋,又香又鲜。和新做的卷子是两种味道,但一样好吃。

小贴士:

水尽量用温水,更有助于面团的醒发。

萝卜不用削皮,切丝时可以切稍粗一点的丝,这样卷子味道更有味道。

铺馅时,不用铺过满,面皮留2cm左右的空,防止卷的时候,馅料洒出。

卷的时候一定要卷紧实,不然出锅后会变得软趴趴的。

切的时候,下刀慢一点,别把卷子切变形了。
